Cooking 101

How to prepare hot seasoning (Chaunk/Tadkha/Taalimpu). Hot seasoning adds flavor to dishes like spinach or tomato dal, sambhar (lentil soups), curries, etc. The ingredients for the seasoning varies from dish to dish but the main ones are cumin and mustard seeds, curry leaves, hing or asafotida, and oil of course. The seasoning can be prepared either on the stove or in the microwave.  



Quick Tips: Seasoning for dals should be prepared after the dal is cooked for better taste. For most curries, we start with the seasoning and then add vegetables. Make sure to remove the seasoning from heat before the ingredients start to burn or turn too dark. Also, make sure to stay back a little from the stove because the ingredients tend to splatter. 


To make any of the following breads: rotis, chappatis, parathas or even puris, you need to first practice and perfect your skills at making the dough.  The ingredients needed to make the dough (in this video) are (2) cups of Atta, (1) tsp salt, and (1) cup of water. Combine the dry ingredients and slowly add the water to bring the ingredients together. Make sure to gather all the mixture from the sides and knead the dough until it's not sticky and make it into a ball. Rub a tsp of cooking oil on the surface of the dough and place in a bowl with lid to cover. Put it aside for 15 -30 minutes. And from here you can go onto make any type of bread you choose to serve with your meal.


Quick Tips: If the dough seems flaky and dry, add little more water.  However, if the dough seems sticky, add more flour to absorb the water.
